'Magic Potion' Overnight Oats
Some say breakfast is the most important meal of the day but in the crazy morning rush it’s easier to reach for the (sugar-packed) cereal.
Overnight oats are the perfect breakfast for a busy school morning as all the prep is done in advance. High in fibre and slow-release carbohydrates, it’s the best way to kick start your family’s day.
If you’re interested in trying different types of plant-based milks for Veganuary, this is an excellent way. Soy milk has the best nutrition credentials most similar to dairy (with good protein and calcium benefit) but generally unsweetened varieties can complement a varied diet.

To store the overnight oats, mason jars are the best but any air-tight container will do. They will stay good in the fridge for up to 4 days but it’s best to add any fresh fruit to the oats at the time of eating.
